Raisin cake

Recently a friend of mine, who is vegan, asked me to make her an eggless raisin cake for her birthday. After a few trials, this is what I came up with. I love it! It is very moist, light, and sweet – all that you would expect from a cake.

You will need:

Preheat oven at 350 degrees Fahrenheit.

4 cups Flour

1 cup Sugar

1/2 cup veg. oil

2 cups orange juice

1 Orange, zested

1 cup golden raisins

¾ cup walnuts, ground

1 tsp. baking soda

1 tsp. pure vanilla extract

Pinch of salt


In a large, deep mixing bowl mix together the sugar and the oil.

In a separate bowl mix together the orange juice and the baking soda, then add it to the sugar mix; blend well.

Add and blend the rest of the ingredients into the mixture.

Pour the mixture into a cake pan, loaf pan, or a bundt pan!

Put it in the oven and bake for about 45 minutes to an hour. As a general rule, a cake is done when a toothpick inserted into the center of the cake comes out clean.
