This Cucumber Salad recipe is made with deliciously crunchy slices of cucumbers and radishes tossed with a creamy, garlicky yogurt dressing.

Oh my gosh! Never use the mandoline while you’re NOT thinking about the fact that there’s a sharp blade 2 millimeters from your index finger.
There I was, in the kitchen, doing my salad-thing, thinking about my next TJ Maxx splurge – I like to keep it classy… – when BAM! The mandoline decided to have its way with me! Lawwwd, that hurt! It’s like a paper cut, but not. It’s like a MILLION times worse!
My husband threatened to pitch out the mandoline because I have yet to use that thing without hurting myself. Then I threatened that without the mandoline, I would never make his favorite Radish and Cucumber Salad, again. Seconds later, that mean little tool found its way back on the kitchen counter.
SO, it’s Friday! Have you clocked out, yet? Mentally, I’m sorta always clocked out. Which is the reason my fingers are all wrapped up now…

I’m fairly certain that we’re approaching the time of year when it’s reasonable to eat salads thrice a day. (Think beach-bod!)
When my husband and I first got married, I would always make my favorite Simple Cucumber Salad, and without even mentioning it, I’d see him slicing up a few radishes into his bowl. I’ve never met anyone else that can eat a radish with so much joy! He LOVES ’em!! I can’t even taste them! Do they have a taste?
Well, soon thereafter, and all the while to make myself happy with some variety, I started to add the radishes to our cucumber salad, but not without a good dose of garlic-yogurt dressing. Garlic is always the answer. ALWAYS.
This salad is simple, refreshing, easy to make, and a celebration of summer-food.
Besides, there are short dresses and sandals in our very near future…like, this weekend. Lawd help me.

Radish Cucumber Salad
Ingredients
- 1 English cucumber, washed and cut into thin rounds
- 10 radishes, washed and thinly sliced
- 1 bunch green onions, chopped
- ¼ cup plain yogurt
- ¼ cup lite sour cream
- 1 teaspoon extra virgin olive oil
- 2 cloves garlic, minced
- ½ teaspoon salt, or to taste
- ¼ teaspoon fresh ground black pepper, or to taste
Instructions
- In a salad bowl, combine sliced radishes, cucumbers, and chopped green onions; set aside.
- In a mixing bowl, whisk together all the ingredients for the dressing; taste for seasonings and adjust accordingly.
- Add the dressing to the salad; mix well and place in the fridge for 20 minutes.
- Serve.

I added some lemon zest, juice and apple cider vinegar. It was yummy

Creamy Cucumber Salad can last 3 to 4 days as long as it is kept covered and in the fridge.
Make this cucumber and radish salad . I also cut up jickama for a sweet crunch.
I loved the idea of this recipe and all the ingredients, but it was just bland in the end. I added more garlic, dill, parmesan, but it’s still really missing something and I can’t put my finger on it.
I added finely sliced carrots to mine and the sweetness of the carrot was a nice compliment…

sounds very delicious. but for me a sweet component is missing. I will add some honey to the dressing!
I made this salad yesterday. Loved it! I’ve been married for a year and I’m trying to add new side dishes to our rotation. This is definitely a keeper. The only thing is that the recipe calls for too much salt – the dressing was too salty so I added more yogurt to fix it. I definitely suggest adding the salt and pepper to taste. Also, I prepared the salad and put it in the fridge for about an hour. By the time we ate it, the dressing had become very runny (maybe because of the cucumber’s juices?). Thanks for the recipe!
I forgot to mention that I added lime juice to the dressing (in my effort to fix the saltiness). It was a great addition!

Yes, the cucumber juices will definitely make it runny. I always take it out of the fridge after 10 to 15 minutes.
I always salt my cucumber slices in a strainer for about a half hour then pat dry pulls alot of moisture out good for any cucumber salad crunchy and yummy
Removing the cucumber seeds will also help with the water issue – as well as soaking in salt water as mentioned below.
I added some dill to mine as well. I’ll try a bit of lime next time.
