Prosciutto Wrapped Salmon Skewers

AN EASY SALMON DINNER IDEA

Just the thought of cooking fish can feel intimidating at first, but trust me when I say it isn’t! This recipe is so simple, you won’t have any regrets giving it a try.

Part of the reason why this salmon dinner is so easy is because the fish is cut into small strips and baked in the oven. The smaller strips of salmon bake faster, which means this will end up on your table sooner. You’re looking at well under 30 minutes from prep time to dinner time.

WHY BAKED SALMON SKEWERS?

There’s no way I’m going outside on a cold winter even to grill something, and that’s the beauty of this recipe – no grill is required! Baking these skewers allows you to have them anytime of the year, and you aren’t just limited to grilling season. Now you can get your omega-3’s all year long!

Also, who doesn’t love eating with skewers?! It’s the original finger food.

WHAT IS PROSCIUTTO?

Prosciutto is thinly sliced, uncooked, dry-cured ham. It comes from the fatty area of the hind leg or thigh of the pig, giving it a buttery texture.

Have you ever wrapped anything in Prosciutto? I know the norm is to wrap food in bacon, and we know why – because bacon is delicious! Unfortunately, bacon won’t work in this recipe because it needs much more time in the oven than the salmon to crisp up.

I promise you, the Prosciutto won’t disappoint, and when you take your first bite you won’t even remember you were thinking about bacon in the first place.

INGREDIENTS FOR THIS BAKED SALMON RECIPE

I’m always amazed at how some seemingly ordinary ingredients can pack so much flavor. With just a handful of items, and minimal prep time, you can achieve the perfect combination for a crisp, tender, and delectable meal. It really doesn’t get easier than this!

Here’s what you’ll need:

  • Frozen salmon filets
  • Prosciutto
  • Olive oil
  • Black pepper

HOW TO MAKE SALMON SKEWERS

  1. First, thaw salmon fillets, BUT don’t thaw them all the way through. It’s way easier to thread salmon onto skewers while it’s still a bit frozen. 
  2. In the meantime, soak wooden skewers in water for 10 minutes.
  3. Take the almost thawed fillets and cut into long pieces; you’ll need 8 in total.
  4. Thread salmon onto skewers, and wrap with prosciutto.
  5. Brush with olive oil and season with crack of pepper.
  6. Bake in the oven for about 12 minutes, or until fish is cooked through.

Ingredients
  

  • 1 pound salmon fillets, frozen
  • 8 slices proscuitto
  • 1 tablespoon olive oil
  • Fresh ground black pepper

Instructions
 

  • Take out the fillets and thaw, but do not thaw all the way through. It’s much easier to thread the salmon onto the skewers when it’s still a bit frozen. 
  • Soak the skewers in water for 10 minutes.
  • Preheat oven to 425˚F.
  • Line a baking sheet with parchment paper, or aluminum foil, and set a rack over the baking sheet. Set aside.
  • Take the almost thawed fillets and cut into long pieces; you’ll need 8 in total. I get 4 fillets - they each weigh about 4-ounces - and I cut each fillet, longwise, into two pieces.
  • Put skewers through each piece of salmon.
  • Wrap prosciutto around the salmon.
  • Brush olive oil over each prosciutto wrapped salmon and season with crack of black pepper. You can also add salt, but keep in mind that prosciutto is salt-cured, air dried ham.
  • Transfer prepared skewers to previously prepared baking sheet and place skewers on top of the rack.
  • Bake in the preheated oven for 10 to 12 minutes, or until salmon is cooked through and prosciutto is crispy.
  • Remove from oven and serve.

    Oh my goodness! Where have these been all my life. I never thought to combine these 2 items but wow! So very good and very easy.

          Thanks so much for bringing this to my attention! It’s actually neither. 😳 Blue points (freestyle points) would be 4. During my calculation, I think I messed up with the amount of servings. 🤦‍♀️
          Salmon is Zero points, the 8 slices of prosciutto are 11 or 12, depending on which brand you get, and olive oil is 4 points. All of that equals 15, divided by 4 servings, that would equal to about 4 ww points.
