Ingredients
  

  • 4 boneless, skinless chicken breasts
  • cup all-purpose flour
  • ¼ cup panko crumbs
  • 2 cloves garlic, minced, or use 1/2 teaspoon garlic powder
  • ¼ cup grated parmesan cheese
  • ½ tablespoon Italian Seasoning
  • salt and freshly ground black pepper, to taste
  • ¼ cup skim milk, or any milk that you have on hand
  • 3 tablespoons olive oil
  • 4 slices part-skim mozzarella cheese
  • 10 to 12 pepperoni slices
  • 1 cup halved cherry tomatoes

Instructions
 

  • Preheat oven to 400˚F.
  • In a ziplock bag, combine the flour, panko crumbs, garlic, parmesan cheese, Italian seasoning, salt, and pepper.
  • Pour the milk into a bowl.
  • Dip the chicken breasts in the milk, transfer to the bag with the panko crumb mixture, and toss to coat.
  • Heat the olive oil in a large oven-safe skillet.
  • Remove the chicken pieces from the bag and add them to the skillet.
  • Cook for 1 to 2 minutes on one side; flip over and continue to cook for 1 more minute or until lightly browned.
  • Place the skillet in the oven and bake for 10 minutes; flip over the chicken and continue to bake for 8 minutes.
  • Remove from oven; place the mozzarella cheese slices over each chicken breast, top with pepperoni slices, and halved tomatoes.
  • Place back in the oven and bake for 6 to 8 more minutes or until the cheese is melted.
  • Remove from oven and let stand for 5 minutes before serving.
