Ingredients
  

  • 3 tablespoons olive oil
  • 1 large large yellow onion, thinly sliced
  • 2 to 3 cloves garlic, finely chopped
  • 4 banana peppers, sliced into rounds
  • 2 cups diced fresh tomatoes or use canned tomatoes
  • 1 package (13 ounces) smoked turkey sausage, sliced into 1/4-inch rounds (I used Turkey Sausage by Butterball)
  • 3 sprigs fresh thyme leaves
  • salt and fresh ground black pepper, to taste
  • 8 ounces egg noodles
  • cups vegetable broth
  • 1 cup skim milk
  • 1 cup shredded parmesan cheese
  • crushed red pepper flakes, for garnish
  • chopped fresh parsley, for garnish

Instructions
 

  • Heat olive oil in a large skillet set over medium-high heat.
  • To the heated oil, add the sliced onions, garlic, peppers, tomatoes, sausage, and thyme leaves.
  • Season with salt and pepper and cook, stirring occasionally, until the vegetables are slightly tender, about 5 minutes.
  • Stir in the noodles, broth, and milk, and bring the mixture to a boil.
  • Turn down the heat to medium-low, cover the pot, and continue to cook for 12 minutes.
  • Remove from heat and stir in the cheese and let stand 5 minutes.
  • Garnish with crushed red pepper flakes and fresh parsley.
  • Serve.

  • Cookware: If possible, try to use a large (about 12-inches/5-quart) skillet/pan.
  • Noodles: I recommend egg noodles for this recipe, but you can also experiment with other types of noodles or pasta.
  • Milk or Cream: I use skim milk here – just a way to cut down on those calories – but you can use half & half or even heavy cream for a creamier, thicker sauce. 
  • Cheese Alternatives: If you’re not a Parmesan fan, try shredded mozzarella or crumbled feta.
  • Vegetables: You can toss in other vegetables that you have on hand, like bell peppers, corn, zucchini, or spinach.

  1. any ideas about how many cups are in 1 serving? or how many calories would be in 1 cup? absolutely delicious recipe by the way!

    1. The total weight of the main components is close to 40 ounces.
      8 ounces of egg noodles
      13 ounces of turkey sausage
      16 ounces of diced tomatoes
      Plus additional ingredients (onion, garlic, banana peppers, broth, milk, cheese, etc.)

      Divide that by 4 people, and you get roughly 10 ounces per serving.

      Hi!
      For leftover noodles, I heat up a tablespoon of cooking oil in a skillet and add the noodles to the hot oil to warm through. Sometimes, to make things easier, I’ll just microwave the leftovers. 😊 But, I think the skillet route is better, and the oil adds moisture to the dry noodles.

  3. Super delicious and really easy! I had the fine egg noodles on hand which worked great. I also used a link of spicy chicken sausage and halved the recipe. Perfect amount for two for a fresh, delicious lunch. Tomatoes, jalapeño, onion and garlic and wow, terrific flavor and texture!

  5. I made this last night. Added more jalapenos, green peppers and used 12 oz of noodles instead of the 8 (so used 2 cups of stock and 1.5 cups of milk. It was spicy and so great tasting. Thanks for a great recipe.

  7. This was delicious, and will now be a regular dish for me. Super easy, and only one pot/pan to clean up! I substituted the recommended pasta and broth with bow-tie pasta, and chicken broth. I also used diced canned tomatoes as I didn’t have any fresh. I used fresh spinach, lots of banana peppers, and fresh green beans.

  8. I made this tonight and, while delicious, not all of the liquid evaporated. I followed the directions – any idea what might have happened here? I’d love to make this again the right way!

    I have Reame’s frozen egg noodles. Could I use them in this dish? Would it affect cooking time since they are frozen?

      Hi Brooke! I have never used frozen noodles so I really can’t tell you for sure, but I believe that it will change it because of the water that will be released while cooking. You’ll lose flavor and texture.

  10. I’m having a hard time finding fresh banana peppers in stores. Any recommendations on a substitute pepper?

      Hi Amber! You can use orange or yellow bell peppers, but cut them into thin strips as bell peppers are thicker and need just a little more time to cook. I hope that helps!
