You know how you go on Facebook and you’re all innocently browsing around your friend’s wall and then you start clicking around their friend’s photos, and their friend’s friend’s photos, and their friend’s friend’s mother’s photos? Oh, puhlease! As if you don’t know what I’m talking about…
Suddenly you are looking at a stranger’s photo album and profile, and think, oh wow they are livin’ it up! Software Engineer, house in the Bahamas, house in Chicago, 2 kids, hot husband… Holy smokes! You just stalked some innocent person’s FB page!! AND you hit “Like” on their photo because something just possessed you to do that!! Aaaaah!
You’re freaking out as it is because you’re on their page, and God forbid they can somehow see you stalking them, but then you go and hit like on their photo?! What the?! AND you’re not even friends, let alone Facebook friends?!?
My fingers have never moved so quickly to hit the “Unlike” button…
Apparently, I suck at Facebook-stalking…
At least I can bake. Even that is questionable, at times. I messed up 3 cookie recipes last week… I’m blaming it on the oven. The temps are off. (I made that up, but still…it’s my blog…I can do that. 😉 )
So, are you ready for cookie season? Hope so! I’ve got cookies coming out of the oven every other day around herrrrr! Few days ago I had this annoying craving for those Chocolate Butterscotch Cookies and I just had to make them. Those things are aaaamazing!
Wanna know what else is amazing? Chocolate-covered raisins. OH MY! They are SO addicting. Buying them in bulk is a really bad idea. Trust me. Mid way I decided to stop munching on them and throw them into these cookies.
I started with making a batch of chocolate chip cookies, but as I said, mid way through the bag of those raisins I decided to switch it up and add in some oats and the rest of the chocolate covered raisins. Not a bad idea… not.at.all. AT ALL!
BUT, to make matters even more interesting, I somehow was able to stop eating the raisins, but now I was all into the raw cookie dough. I started spooning it into my mouth, cutting my 36-cookie recipe down to 28! My stomach was soooo pissed at me… for, like, days.
Lesson(s) for today; don’t stalk people’s FB pages unless you’re a pro. Don’t eat 2-pounds of chocolate-covered raisins – save some for the cookies, and don’t eat raw chocolate chip cookie dough because you’re stomach will hate you. The end.
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1-1/2 sticks butter (12 tablespoons), softened
- 1/2 cup sugar
- 1/2 cup packed light brown sugar
- 1/4 cup milk
- 1 tablespoon pure vanilla extract
- 1 egg
- 2 cups chocolate-covered raisins
- Preheat oven to 375.
- Whisk together flour, oats, salt and baking soda; set aside.
- In your mixer's bowl combine butter and both sugars; beat until smooth and creamy.
- Mix in milk and vanilla extract.
- Add egg and beat until thoroughly combined.
- With your mixer on low, slowly add the flour mixture to the butter mixture; beating until well combined.
- Stir in the chocolate-covered raisins.
- Drop by rounded tablespoonfuls, at least 2-inches apart, onto ungreased baking sheet.
- If you want a soft and chewy cookie, bake for 8 to 10 minutes.
- If you want a crispier cookies, bake for 11 to 13 minutes.
- Cool on baking sheet for a few minutes.
- Place on wire rack to cool completely.
