
Healthy Fajitas with Chicken
Ingredients:
2 chicken breasts
5 banana peppers
1 large onion
1 fresh tomato, chopped
6 tbsp. plain yogurt
6 whole wheat tortillas
2 tbsp. extra virgin olive oil
Salt and pepper to taste
Directions:
Preheat oven at 375 degrees Fahrenheit.
Chicken
Prepare the chicken by seasoning it with salt and pepper.
Lay the chicken breasts on a baking pan and put the pan in the oven for about 25 to 30 minutes.
Once the chicken is done, pull it out and increase the oven temperature to 400 degrees Fahrenheit.
Allow the chicken to cool for about 10 minutes before cutting it lengthwise.
Vegetables
While the chicken breasts are cooking, move on to the cutting board and slice the banana peppers crosswise; each ring should be about an inch thick.
Slice the onion into ½ inch rings.
Place the peppers and onions in a shallow roasting pan; sprinkle them with salt, pepper, and extra virgin olive oil. Put the peppers and onions in the oven at 400 degrees Fahrenheit for 10 minutes, stir, and put them back in for another 10 minutes.
Stuffing the Tortillas
Take the whole wheat tortilla, spread a tablespoon of yogurt, layer a few slices of chicken, spoon the peppers and onions over the chicken, add some fresh tomato chunks on top, and fold it. Do the same with the rest of the tortillas.
*You can also grill the chicken and the vegetables, but make sure that the grill is hot so that the food doesn’t stick.

A bell pepper is fine, too. I use the banana pepper because it adds a bit of sweetness to the dish – more flavor.
