French Fridays with Dorie: Buckwheat Blini with Smoked Salmon and Crème Fraîche

Truth be told, the title should read NOT Buckwheat Blini…. NO Crème Fraiche.


Last week, among other things, my “To-Buy” list included, buckwheat flour and salmon roe. I wasn’t even going to attempt finding crème fraiche – I thought either I’ll make it, or homemade yogurt will do.

Three stores later, I was still without buckwheat flour and salmon roe. The third place I checked didn’t even have salmon let alone salmon roe.

So I’m not sure about how a buckwheat blini tastes, but my all-purpose flour blinis were amazing!

I have made blinis before, but the recipe I have is somewhat different than this one; I am throwing that one away and replacing it with Dorie’s. They are delicious! I ate them without any toppings. They were that good.

    I liked these enough to eat them plain, too. In fact, my father kept sneaking into the kitchen for leftovers. Lovely presentation of yours!

    Wow..what an elegant and sophisticated little meal. Blinis are definitely on my to do list. Love these with smoked salmon! (Don’t ya just hate having to go to several stores sometimes! Whatever happened to one stop shopping!)

    Ah, those FFwD scavenger hunts. Gotta love it.
    I snuck a few of these straight off the griddle – they were good.
    As Janet suggested, try the organic section if you can’t find it in the flour section.

      Hi Cher! Funniest part of it all was that the clerks and the managers had no clue what I was talking about … “um..what’s that? buckwheat?!” 🙂

    I’m glad I’m not the only one that can’t find ingredients in some of these recipes! I’m sure I couldn’t get my hands on salmon roe but our very expensive grocery store might have the buckwheat flour. I just can’t see buying a bag for one recipe. I’ll bet you could come up with all kinds of toppings for those blini’s if they taste that good alone. Beautiful photos!

    These look really good. I have issues finding everything where I live. I always tell people it’s like a culinary black hole here. So can totally relate to having to use something else to make a recipe work. You managed to do a lovely job on this one.

    You sure made beautiful blinis despite all the ingredient hassles. I had a heck of a time finding buckwheat flour…and finally located it at my least favorite market. I was shocked. Hope you have a fabulous weekend, my friend!!!

    Looks great, Kate! I have never had blinis before… not sure why. Hmmm.

    As for buckwheat flour, I have bought it in the organic section of the grocery store before. Maybe you could find it there? 🙂

    I really liked them too! Creme fraiche wasn’t in my radar either but 2% Greek yogurt did the trick. Your little stack looks fantastic.
