Before I get into these delicious, chewy, sweet, aromatic Clementine Bars, allow me to tell you a bit about all that happened to get to them.

I should tell you that I have a Friends reference, or quote, for any situation in life.

I’m quoting myself, and a Friends’ character, from a few days ago: “You-you-you-you threw my sandwich away… MY SANDWICH?!?! MY SANDWICH!!!!!!”

Quick, quick – Who am I?!?

Ding Ding Ding! ROSS!

Someone, (it was the hubs) threw away my sandwich. MY SANDWICH! I was saving that for breakfast. Or maybe he ate it!! Which is even worse! That was MY sandwich!

Okay… breathe… I need to get over this. Seriously.

Let’s move on to the next quote.

How about this one: “Man, this is weird. You ever realize Captain Crunch’s eyebrows are on his hat?!” (LOL!!!)

That’s right! That was Joey!

Joey is not alone in this. I used to think the same thing. I still do. Couldn’t the artist make more room between the man’s hat and his brows. Like, maybe, adding a forehead?! Just a thought.

Are you thinking, “Could she BE any more obsessed with a TV show?” <—-said in Chandler’s voice. 😀

While it’s clear that I can quote just about every episode of Friends, I should also tell you that I can eat 9 Clementine Bars in the course of 2 days.

For the sake of transparency, I should also tell you that those 2 days didn’t equal to 48 hours. No, it happened in a little more over 12 hours. I ate them all because he threw away (or ATE) MY SANDWICH!!

HA! No Clementine Bars for you, Mister! …and-a-few-thousand-extra-calories-for-me. I didn’t realize that when I was eating them. It was all about revenge. I’m such a brat. I really need to get over this, quick.

Maybe I will forget about it if I turn my attention elsewhere. Like maybe if I write a note to Captain Crunch’s artist and finally ask him/her to give the poor man a forehead.

I suppose this is the part when I should tell you a bit about these bars, eh? Would you believe that I made them in the microwave? And that it took all of 11 minutes and 13 seconds? It’s true. You don’t have to make them in the microwave. I just thought it would be cool to let you know that you can. I was impressed. This beautiful, 85-year old lady at Church told me that she cooks everything in the microwave, so I decided to try it with these bars. It worked!

Clementine Bars

Delicious, chewy, sweet, aromatic Clementine Bars with graham cracker crust.

Ingredients
  

  • 1-1/2 cups ground graham crackers
  • 6 tablespoons butter , melted
  • 1/2 cup fresh clementine juice , 4 to 5 clementines
  • 2 tablespoons clementine zest , divided
  • 1 can (14-ounces) sweetened condensed milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • Powdered Sugar for garnish

Instructions
 

  • Preheat oven to 350.
  • Butter an 8x8-inch baking dish, and set aside.
  • In a medium bowl, combine the ground graham crackers, melted butter, and 1/2 of the clementine zest. Mix until thoroughly combined.
  • Press the mixture onto the bottom of the prepared baking dish and bake for 8 minutes. Set aside.
  • In your mixer's bowl, beat together the clementine juice, sweetened condensed milk, lemon juice, and vanilla.
  • Pour on top of the crust and bake for 20 to 25 minutes, or until set.
  • Cool completely before serving.
  • Garnish with powdered sugar and the remaining zest.
  • Cut into squares and serve.
Microwave Method
  • Butter an 8x8-inch microwave safe baking dish, and set aside.
  • In a medium bowl, combine the ground graham crackers, melted butter, and 1/2 of the clementine zest. Mix until thoroughly combined.
  • Press the mixture onto the bottom of the prepared baking dish and set aside.
  • In your mixer's bowl, beat together the clementine juice, sweetened condensed milk, lemon juice, and vanilla.
  • Pour on top of the crust and microwave for 10 to 12 minutes, or until set, on MEDIUM-HIGH (about 70%).
  • Cool completely before serving.
  • Garnish with powdered sugar and the remaining zest.
  • Cut into squares and serve.

    I was never much of a Friends fan but I can quote every episode of The West Wing. Not that anyone has ever gotten a single reference. The bars look and sound awesome, and it is very cool that you can make them in the microwave!

  2. Oh no! I hate when that happens! I am very particular about my sandwiches, and my husband accidentally ate mine once. Needless to say, it didn’t happen again! These bars look so very good, my friend. And what a cool way of preparing them. Thank you for sharing them with us!

  3. I will quote friends to the day I die! One of my faves is Rachel saying to Joey “You’re so pretty” when he talked about being dropped off at the movies with a jar of jam and a spoon.

    Also, I never realized that my microwave could be used for something other than popping popcorn (or for storing bread and a stash of Lofthouse cookies).

  6. I guess the microwave just has to be used for the right recipe. Too many bars these days. I’ve given up a lot of treats for Lent motivated by the fact that I ate TEN … let me repeat that … TEN … paczki over the course of 3 days before Lent. No bars for me for a while even these very tasty looking ones.

    Oh my stars! I just did “The Chandler” over at my pal Ali’s blog (A Girl Defloured) over a cocktail recipe earlier today. I used the “BE” emphasized, LOL! Friends was such a great show.
