Friends, let me introduce you to my new favorite thing: sped-up Chicken Marengo! This is a delicious heaping pile of tomatoes and mushrooms sitting on top of perfectly cooked and somewhat spiced chicken breasts. Healthy comfort food that is absolutely perfect for Fall. You are going to lick your fingers cleeeaaan!

But, can we back it up a bit? I need to tell you a pretty cool story that totally ties in with this recipe.

Clearly, we wined, we dined, we talked, we photographed, but most important thing of all is that we witnessed the Hunt’s difference.

Hunt’s cans their diced, whole, stewed and crushed tomatoes within hours after harvest. However, before all that happens, Hunt’s peels their diced, whole, AND stewed tomatoes using a process called FlashSteam™ which uses steam from simple hot water.

Below is a demonstration I saw at Tasting Table of how you can steam peel tomatoes at home, which is similar to the FlashSteam™ process that Hunt’s uses for its tomatoes.

Cut a cross on the bottom of the tomato.

Peel it. 

BOOM! Steam peeled tomatoes using just water! Done and done.

You see, some companies use *lye (a chemical) to peel their tomatoes, and Hunt’s just uses FlashSteam™, which is kind of brilliant! I mean, Lye peeling is generally recognized as safe by the FDA and has no adverse effects on the healthfulness of tomatoes, but still. If you can just use hot water, why reach for the stuff with chemicals?! RIGHT?! Right.

This is how our Chicken Marengo starts. Onions, garlic and tomatoes to boot, followed up by mushrooms and tons of basil and parsley.

In the meantime, we have our chicken on the burner right next to us, sizzling away, waiting for her sauce to dress her up and make her that much more delicious.

What can I even say? We LOVE this healthy, flavorful, extremely basic and wonderful chicken dish loaded with everything tomatoes and yummy.

Ingredients
  

  • 3 tablespoons olive oil , divided
  • 16 ounces boneless , skinless chicken breasts
  • 1/4 teaspoon cayenne pepper , or to taste
  • salt and fresh ground pepper , to taste
  • 1 large yellow onion , diced
  • 3 garlic cloves , minced
  • 1 can (14.5 ounces) Hunt’s Diced Tomatoes
  • 1 cup low sodium fat free chicken broth
  • salt and fresh ground pepper , to taste
  • 1 package (8-ounces) sliced mushrooms
  • 1/2 teaspoon all purpose flour
  • 1/4- cup basil leaves , cut into thin ribbons
  • 1/4- cup chopped fresh parsley

Instructions
 

  • Heat 1 tablespoon olive oil over medium heat in a nonstick heavy bottomed skillet.
  • Season chicken breasts with cayenne pepper, salt and fresh ground pepper on all sides.
  • Add to hot oil and cook until edges are opaque, about 10 minutes.
  • Flip to the other side, cover the pan, lower the heat and cook for another 10 minutes, or until done.
  • In the meantime, prepare tomato sauce.
  • Heat 2 tablespoons olive oil over medium-high eat in a nonstick heavy bottomed pot or large skillet.
  • Add onions and cook for 3 minutes.
  • Stir in garlic and continue to cook for a minute, or until fragrant.
  • Add tomatoes and chicken broth; season with salt and pepper and bring to a boil.
  • Lower to a simmer and cover; continue to cook for 15 minutes.
  • Remove lid and add the sliced mushrooms.
  • Add the flour and stir until completely combined.
  • Cover with lid and continue to cook for 5 more minutes.
  • Remove lid; stir in basil and parsley.
  • Remove from heat.
  • Taste for seasonings and adjust accordingly.
  • Transfer prepared chicken breasts to a serving plate.
  • Top chicken with prepared sauce.
  • Serve.
