You guys, I think I broke my website. Or, blog… whatever the kids call it these days.
I couldn’t get on here for like 1.6 days – I was freaking out, almost having a heart attack! I don’t know what I did, but fingers crossed, you’re seeing this post.

But, who cares when according to my husband, and myself, I am THE BEST sandwich-maker. I really am! They’re SO GOOD!

All our leftovers end up in grilled cheese sandwiches. I can’t imagine something tasting bad when it’s accompanied by gooey, melty cheese!

Wanna know what I can’t stand? Throwing away food. When I find food in the back of the fridge or pantry, and it’s dead, I get really, really p’ed off! I start going into my spiel, yelling at my husband and my kids about how money doesn’t grow on trees, how there are people that can’t afford food and here we are, throwing it away.

To save the family from listening to my rant, I took the rest of those beautiful Sprinkles Easter Eggs and used them to make my Rustic Egg Salad, but I also added some to this insanely good grilled cheese sandwich.

Thus, in honor of April being National Grilled Cheese Month, I made you a BLT with EGG Grilled Cheese Sandwich!

I love this sandwich. It’s bold, it’s cheesy, it’s melty… Umm, there’s bacon in it!

I feel funny giving you a recipe for how to make a sandwich because I’m pretty sure you know how to do that. However, adding an egg to a BLT is serious business. Also? How about that Caprese Grilled Cheese Sandwich? See… sometimes a recipe is needed to inspire something else. I hope this recipe will inspire you to give this sammich a good try. Pile up those slices of bread and get ‘er done!

Ingredients
  

  • 2 slices multigrain bread
  • 1 teaspoon mayonnaise
  • 1 slice Provolone cheese divided
  • lettuce leaves
  • 1 slice bacon cooked to a crisp
  • 1 hard boiled egg sliced
  • 1 tomato sliced
  • 1/2 tablespoon butter

Instructions
 

  • Spread mayonnaise on each bread slice.
  • Top one of the bread slices with a slice of cheese.
  • Add lettuce.
  • Place cooked bacon over lettuce.
  • Add slices of egg over the bacon.
  • Top with tomato slices and 1 slice of cheese.
  • Close sandwich with the slice of bread.
  • Melt butter in a saute pan over medium heat.
  • Grill sandwich until golden brown on both sides.
  • Serve immediately.
