If you’re a busy mom with kids, the Slow Cooker is perfect for you. Just load it up with the needed ingredients and walk away to handle other exciting adventures going on in the house. No need to slave over a hot stove early in the morning. Have a coffee and let that crock pot do all the work.

One of my favorite breakfast meals to make in my Slow Cooker is this Veggie Omelette. It’s loaded with vegetables and protein, making it the perfect way to start the day. Also, when I couldn’t care less about carbs, I make this Crock Pot Creamy Banana French Toast. 😍

Ingredients for Omelette

The ingredients for this recipe are so simple. You can have this thrown together in no time at all. 

Here’s what you’ll need:

  • Eggs
  • Milk
  • cheese
  • Garlic Powder
  • Chili Powder
  • dried herbs
  • small broccoli florets
  • Red bell pepper
  • Yellow Onion
  • Garlic

How To Make an Omelette in the Slow Cooker

Are you ready to make the best veggie omelet without all the work? Let’s do it!

  1. First, lightly grease the inside of the slow cooker/crock pot with cooking spray; set aside.
  2. Then, in a large mixing bowl combine eggs, milk, salt, pepper, garlic powder and chili powder; using a whisk, beat the mixture until mixed and thoroughly combined.
  3. Next, add the broccoli florets, peppers, onions and garlic to the slow cooker; stir in the egg-mixture. By the way, you can also fry the broccoli, peppers, onions, and garlic for few minutes, or until just softened, before adding them to the slow cooker. 
  4. Cover and cook on HIGH for 2 hours. Start checking at 1 hour 30 minutes. Omelette is done when eggs are set.
  5. Next, sprinkle with cheese and cover; let stand 2 to 3 minutes or until cheese is melted. 
  6. Cut the omelette and serve.

How to Store Slow Cooker Veggie Omelette

As with all food that gets stored in the refrigerator or freezer, leftovers from your slow cooker need to be cooled on the countertop to about room temperature before placing into the fridge or freezer for storage.

  • Fridge: Your leftover veggie omelette can be stored the in the fridge in an airtight container for 4 days.
  • Freezer: You can also freeze it. Just, let it cool down completely before putting it in an airtight container. You can store it in the freezer for up to 3 months.
  • Reheat: Reheating the veggie omelette is super easy. Simply bring it to room temperature on your counter, and then heat on your stove top on low. It should only take about 10 minutes to heat through. Do not reheat the veggie omelette in the slow cooker.

NOTE: Also, do not put a refrigerated slow cooker insert into the heating base while it’s still cold; the ceramic could crack and food is at risk of not reaching proper food safety temperature.

Omelette or Omelet?

  • Both spellings can be used. An omelet or omelette is a type of egg dish, often served at breakfast or brunch. Neither spelling is wrong, but there are some guidelines for when to use which. Omelet is the standard spelling in American English. The British spelling, omelette, is actually the modern French spelling.

What Can You put in an Omelette?

Some classic omelette fillings include:

  • An American omelet has a speckled golden crust from the pan, and the surface is uneven with craters. The round omelet is then folded in half and served. Often, the fillings like meat and vegetables are cooked into the eggs rather than added afterward.

What is the difference between an Omelette and a Frittata?

  • A frittata is cooked in an oven while an omelet is usually cooked quickly over higher heat on the stove. Whereas omelets are served hot straight from the stove, frittatas are often served at room temperature, making them perfect to make ahead for brunches or larger groups.

Ingredients
  

  • 8 large eggs
  • 1/2 cup milk or Half & Half
  • 1/4 cup grated parmesan cheese
  • salt, to taste
  • fresh ground pepper, to taste
  • 1/2 tablespoon dried Italian Seasoning
  • 1/2 teaspoon garlic powder, or to taste
  • 1/2 teaspoon chili powder, or to taste
  • 1 cup broccoli florets
  • 1 small red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
FOR GARNISH
  • 1 cup shredded cheddar cheese
  • cooked diced red peppers or diced tomatoes, optional
  • finely diced onions, optional
  • chopped fresh parsley, optional

Instructions
 

  • Lightly grease the inside of the slow cooker/crock pot with cooking spray; set aside.
  • In a large mixing bowl combine eggs, milk, parmesan, salt, black pepper, Italian Seasoning, garlic powder and chili powder; using a whisk, beat the egg mixture until thoroughly combined.
  • Add broccoli florets, diced peppers, chopped onions, and garlic to the insert of your slow cooker; stir in the prepared egg-mixture.
  • Cover and cook on HIGH for 2 hours. Start checking at 1 hour 30 minutes for doneness. Omelette is done when eggs are set. You can also cook it on LOW for 3 to 3.5 hours.
  • Sprinkle with cheese and cover; let stand 2 to 3 minutes or until cheese is melted.
  • Turn off the slow cooker.
  • Optional: Garnish with chopped peppers, tomatoes, chopped onions and fresh parsley.
  • Cut the omelette into 8 pieces and serve.

      Just be careful not to put the crock itself in the fridge. I did that, and the next morning I took it from the fridge and put it in the crock pot, turned it on and my crock cracked in half!

  5. This sounds delish, and will make it soon, but with my own twist. I think that with the garnish, if you sauteed the onions and tomatoes in olive oil would be great. Then, make a balsamic vinegar reduction, to the consistency of maple syrup, and lightly drizzle over the garnish. Substitute parsley with sweated cilantro. And for my taste, a bit more garlic would be in order. A great starter recipe !

  6. Curious if you, or any of the other readers, have thoughts about making this without dairy milk and instead using something like soy or almond milk? For a family that cannot have dairy products but still likes to have an omelet.

    1. I went ahead and tried it this morning, using soy milk (plain, not vanilla) and Daiya shredded cheese. Turned out perfectly and was a great breakfast. I’m not a very good cook, so this gives me a nice breakfast I can easily assemble and cook for my wife on the weekends.

  7. Tried this recipe last night and it was amazing. you could add or remove veggies depending on what you like.

    This can be a great dinner as well. i did my prep on sunday and after work put it all in the crockpot. It was ready to eat after a long walk with the dogs.

    will definitely make this again and add to my rotation.

      Hi Sarah! I’m very sorry for the late response – I was away on a business trip and I’m just now getting back. You can absolutely double this, but it may take up to 15 to 20 minutes longer to cook. Just start checking at the 2 hour 10 minute mark, making sure that the eggs have cooked through. Hope that helps! Let me know how it goes.

          HI! I have never made it with just egg whites, so I am not 100% sure, but I would add couple more egg whites to the recipe, season it well, and just continue with it as is.

But on low instead of high, to make it an overnight omelet… I love omelets, but I’m not one of those mums who gets up at 4am! Lol! But i could see this would definitely work if I could set it before going to bed instead. Thanks

      Hi Mandi! Yep, I am also not one of those moms :-D, and I did put this on before going to bed once, buuuuut I woke up to a burnt omelette. :-/ It wasn’t too bad, though! Just the edges were a bit crispy. 😀 I had set it on low for over 6 hours… I don’t think it needs more than 4 to 4.5 hours on LOW. I hope that helps!

    I’m cooking this recipe right now, but I was wondering how exactly to transfer this to a serving dish without it turning into scrambled eggs. Any ideas?

      Hi Jackson! If you give it some time to cool down just a bit, it will be easier to remove. I’d use a large serving spoon or spatula and just slide it right underneath the omelette and pull it up. I hope that helps. Let me know!

      Hi Heather! I’m Macedonian Orthodox (Christian), but the reason we celebrate Christmas 2 weeks after everyone else is because our Church still follows the [old] Julian Calendar.
      However, the exchange of gifts is on January 1st and it only symbolizes the beginning of a new year and has nothing to do with the birth of Christ. To keep those two things separate, people have continued to exchange on the 1st of January. 😀
