  2. Shave the brussels sprouts. Cut each Brussels sprout in half lengthwise. Place the cut side down on your cutting board to stabilize it and thinly slice each half. Take your time and watch your fingers.

Ingredients
  

  • 3 tablespoons olive oil
  • 1 pound brussel sprouts, trimmed
  • 1 large red onion, thinly sliced
  • salt and fresh ground black pepper, to taste
  • 1 teaspoon granulated sugar
  • ½ cup pistachios, coarsely chopped
  • 1 whole lime, juiced
  • 1 avocado, peeled and diced

Instructions
 

  • Heat the olive oil in a nonstick pan over medium heat.
  • Cut the Brussels sprouts in half and slice them thinly; they should look shredded.
  • Add the brussel sprouts and onion to the heated oil. Season with salt and pepper; saute for 3 to 4 minutes, or until tender.
  • Stir in the sugar, pistachios, and lime juice.
  • Continue to cook for 2 more minutes.
  • Remove from heat and gently mix in the diced avocado.
  • Serve immediately.
