You guys… In Britney’s words, “Oops, I did it again!”

Get this. I clicked “add friend” on a Facebook profile that I should NOT even be visiting, let alone befriending!! Ugh. You’ve also done that, right? RIGHT?

Gurrrrrl, you have no idea how fast I started to move, looking for an option to undo the damage. All this was happening on my phone at like midnight or so. Do you know how hard it is to focus on finding that other option when you are incredibly frantic? Sheeesh!

But, you know… I was bored. I couldn’t sleep. FB-stalking was the next best thing.

Also? Can I share with you a story about a squirrel and these Samoa Peanut Butter Bars?

K. So. I made these awesome bars, and because Antarctica decided to move into Indiana, aaaaand because I wanted the Samoa bars to cool off ASAP, I set the pan outside, on my snow covered porch. About 30 minutes later I went back to get the pan, but the pan was not where I left it.

After realizing my dumb move and praying that there was no raccoons around, I started my search, when in the corner of my eye I spotted a squirrel hugging the pan and just going at it! Her eyes were moving so fast, looking left to right, almost as if she was making sure that noone was about to come and take her prize.

I don’t know about you, but I would never try to come in between an animal and its food. Ever. I don’t care how small that animal is. Funny thing is that the squirrel left with the pan. I have no idea where the pan is, and I just hope that squirrels and chocolate get along.

Thus, lesson learned. Few days later I made the bars again, but this time I just let them cool off inside the house.

About these lovelies; inspired by my 2-Ingredient Nutella Brownies, and by all my bloggy friends’ Samoa adaptations, I created these delicious Samoa Peanut Butter Bars and ate half the pan! I really did. I am SO thankful for my treadmill!

I highly encourage you to make these over the weekend. They are not crazy sweet, but they are super delicious and also chewy! Like, in a good way.

ENJOY!

Hi Katerina, I absolutely love the way you write your blog! I get a lot of great laughs. I also love your recipes! I’m making some desserts for my Mom’s 81st birthday party tomorrow and that the Samoa Peanut Butter Bars will be a big hit, as well as the Bananas Foster Cake and the Apple Caramel shortbread bars. Obviously a.) I love to bake and b.) I couldn’t make up my mind on which = so it’s all three!

Can’t wait to see what you’ve come up with next. And by the way I will be making these all gluten free, so Ill let you know how they came out and what everyone thought as they stuff their mouths full of yumminess.

    Happy New Year!

Please let me know how your bake-off turns out!! 😉

  2. Somewhere a squirrel is staring at your empty pan, wondering how to replenish it again.

Please send over a batch…please! Someone ate all my Samoa cookies.

Well I think it was nice of you to feed the squirrels like that! (I hope squirrels and chocolate get along too!)

Hahahha that’s one smart squirrel! I will not leave the pan behind if I found these bars outside either.

  5. I don’t know what I love more, these bars or the squirrel story! SO so funny! That’s one lucky squirrel 🙂

My heart went pitter patter when I saw this. Seriously.

These look so good! I love all things Samoas. Quick question – it looks like there’s a crust on the bottom. Is that just how the peanut butter/egg mixture bakes up?

Sorry that I laughed at your loss, but that was so funny oh wow?? That squirrel is a genius – I wish it had been me who stole the pan, because I’d love to eat them all.
    They look mouth-watering ahhhh.
I hope you enjoy your weekend! x

  8. OMG! I’ll bet that squirrel thought it had gone to heaven! AND it came with a nice roof for the squirrel house!

Best story I’ve read in a LONG time! Maybe ever. I don’t have a habit of stealing but these bars…not sure I could resist the temptation! Gorgeous.

Klepto squirrels. I’m loving it. I don’t blame the little critter though. The bars look amazing.

That is the funniest story about the squirrel! It made me lol! Our squirrels would have taken it too. Especially since it has peanut butter in it – they love peanut butter. Best to let delicious treats like this cool in the house.

    OMG THEY’RE GORGEOUS!!

First the recipe itself. I love seven layer bars and anything with sweet cond milk, yes, sold. And the PB.

It looks like a layer of PB custard. Love it’s just really PB + eggs. Nice.

    And your photography. STUNNING!!! pinned

  13. A squirrel stole your pan of peanut butter bars? That’s the funniest thing I’ve ever read on a blog. 🙂

Of course the bars DO sound pretty good.
