Hey! It’s Friday! Time to eat popcorn!?!
I consume an embarrassing amount of popcorn. Em.barrass.iiiiing.
What’s worse is that it’s not just any ol’ popcorn. It sorta, kinda looks like this Salted Chocolate Caramel Popcorn.
Ok, so it is this popcorn.
I’m crazy about it. I can’t keep my hands out of the bowl. I may or may not have added it to my bowl of cereal… And topped my ice cream with it…
In fact, I look forward to the weekends so I can have an excuse to make it because, as we all know, weekend calories don’t count. You shush! This is my world blog. 😀
That’s also why I chose to post this recipe on a Friday – to get you ready for the weekEND!
You know what’s also embarrassing? How easy this recipe is. Seriously. All you have to do is pop some kernels, make the caramel, throw in some chocolate chips and voila! You can prepare it during the introductory credits of that movie you’re about to watch this weekend.
If you want to add some pizazz to your popcorn, make this, like, yesterday! Don’t blame me because you didn’t double the recipe.

Salted Chocolate Caramel Popcorn
Ingredients
- 6 cups popped popcorn (about 5 tablespoons unpopped)
- 4 tablespoons butter
- 1/2 cup brown sugar
- 2 tablespoons light corn syrup
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1/4 teaspoon pure vanilla extract
- 1/3 cup semi-sweet chocolate chips
- Sea Salt , to taste
- chocolate chips for garnish (optional)
Instructions
- Preheat oven to 250.
- Line a large baking sheet with aluminum foil; set aside.
- Place the popped popcorn in a large bowl; set aside.
- Melt butter in a small saucepan over medium-high heat.
- Add brown sugar, corn syrup, and salt; stir until it starts to boil.
- Let boil for 2 minutes without stirring.
- Mix in baking soda and vanilla; mix until thoroughly combined.
- Pour over popcorn, stirring to coat.
- Add in chocolate chips and mix with a wooden spoon until chocolate is melted and thoroughly combined.
- Spread popcorn over prepared baking sheet.
- Bake for 30 minutes.
- Remove, sprinkle with sea salt and let cool.
- Garnish with chocolate chips and serve.

This recipe is DELICIOUS!!! It is very easy and oh so good to munch on! I made it to give in treat bags for some of our friends for Christmas, but I had to make a big bowl for us to eat also because it is so good! Besides how good it is, I was most excited that I had everything on hand to make it and didn’t have to run to the store for anything. One question though – is it normal for the chocolate to come off in your hands? I put it in a sealed container and put it outside (it’s 30-degrees here) to see if that “sets” it. I wasn’t sure if I used candy chocolate if that would make a difference. Any ideas? I also added blanched peanuts. Chocolate-covered fingers or not, it’s worth the extra napkins. This stuff is worth about 10 stars if we were rating it! 😉

So, all popcorn-recipes that I’ve made with chocolate result in chocolate-covered fingers. :-/ Not sure if it would make a difference with candy chocolate because I’ve never tried that. Hey, so I also wanted to make this for like treat bags for a school valentines gram. So i was wondering if this would go stale in like 24 hours? Or like how long will it stay crunchy for?
Also for this recipe, do you think it is bested to buy nonbuttery/nonsalted popcorn? Or what type of popcorn would i need to buy?

You can make it a day ahead, but make sure to store it in an airtight container away from any sunlight. Dark cool place is best. And definitely go with the unbuttered popcorn.

This looks amazing. I might have to stop at the store on the way home tonight to stock up on ingredients.
I will probably try to do all the mixing directly in the Whirley Pop. Has anyone tried this?
After mixing all the ingredients together – instead of baking it for 30 minutes try putting the mixture into a paper grocery bag (fold over the top) and microwave for a minute and a half. Remove bag from microwave and shake bag. Microwave again for another minute and remove. Dump contents onto wax paper and let cool. Sooo much faster than baking!

Oh my! I just love popcorn. This looks sooooo naughty but oh so good. I also love chocolate with a bit of heat…….mmmmm…..I wonder if some sprinkling of cayenne in the choc is worth a try. Popcorn with a bit more pop! I think so!
