It’s been far too long since I told you how to make a sandwich! AND, I would also like to admit that I love sandwiches so, so darn much.

Hey Hey, happy day! How are you? Are you loving this weather or are you LOVING this awesome weather?!

Since we’re through June + a week through July (WHAAAAT), I’ve been working on some activities and plans to make the rest of our summer as totally awesome as possible. We are doing lots of chalk coloring – our driveway resembles a Picasso – we’re playing with tons of water outside, swimming in it, too, and staining some of our favorite outfits with cherries and strawberries. So far, so darn good.

But, most of these activities require me to be outside, and far away from the kitchen – I’m not complaining – therefore, most of our lunches consist of veggies, deli meats, and cheese slices tucked inside soft and delicious french bread. Sliced whole wheat bread is cool, too, but my little ones prefer the white, pillowy stuff.

Spot ON, right?! Some shredded lettuce, tomato slices, deli meat, all the Sargento® cheese slices that I could find, and tah-dahm! They’re just easy Picnic Sandwiches that will make your picnic basket happy. They are quick to make, they are portable, easy to share, easy to eat, and totally customizable.

Alllllllso while we are on the topic of this: going to Kroger for your Sargento® Sliced Cheese on an empty stomach is smart! I stocked up on every.thing. Thank goodness we have two refrigerators. I bought out the whole cheese section. Plus their cereal aisle and all the french bread that I could find. I was hangry, but also, my 4-year old eats those cheese slices like there ain’t no tomorrow. Opens up the fridge drawer, gets the Sargento® bag and poof – cheese gone. Deli meats, too.

Equally important, for the reason that I have a 6-year old vegetarian (!!!) – where does she get these things?! – I also make a straight up veggie sub just for her. For me, too, though. If you know me, then you know that I can deal without ham, but not without veggies and cheese. Ingredients
  

  • 1 (12-inches) French Bread , sliced in half lengthwise (do not cut all the way through - leave part of it attached to hold all of your ingredients)
  • 2 tablespoons mayonnaise or mustard, divided , for spreading, optional
  • 2 cups shredded romaine lettuce
  • 4 slices reduced fat Sargento® Sliced Cheese (Swiss cheese or Cheddar cheese)
  • 1 green bell peppers, thinly sliced into rounds
  • 1 cucumber, sliced into rounds
  • 1 red onions , thinly sliced
  • 1/2 cup black olives , sliced
  • 1 tomato, thinly sliced
  • salt and fresh ground pepper , to taste
  • extra virgin olive oil, to taste
  • vinegar, to taste

Instructions
 

  • Spread mayonnaise or mustard on bread.
  • Arrange the ingredients inside the bread.
  • Season with salt and pepper.
  • Add oil and vinegar.
  • Close bread slices together and cut into quarters, crosswise.

  • 4 slices Sargento® Mozzarella Sliced Cheese
  • 8 slices variety of deli meat-slices; Turkey Ham , Ham, Salami, Roast Beef
  • 2 cups shredded lettuce
  • 1 onion, cut into rings
  • 1 tomato, sliced
  • oregano , to taste
  • extra virgin olive oil
  • red wine vinegar

Instructions
 

  • Arrange all ingredients inside the bread.
  • Sprinkle with oregano.
  • Add oil and vinegar.
  • Close bread slices together and cut into quarters, crosswise.
