Last week I was on a diet, so I ate this stuff every. single. day. Lemme tell you somethin’ – this ice cream is sort of a big deal.

For starters, it doesn’t require an ice cream machine. Score! Then, it only takes mere minutes to make! Got a bag of frozen berries in your freezer? Bam! That’s all you need. Oh! You’ll need a lemon, too. And some sugar… And milk. See! Now we’re done. You have a delicious summer treat that’s healthy, damn delicious, and cold.

Lemon Blueberry Ice Cream + $400 Sizzling Summer Cash Giveaway

Instantly satisfy an ice cream craving with this fast recipe for a delicious Lemon Blueberry Ice Cream. Machine not required.
Serves: Serves 4 to 6
  • 1 bag (16 ounces) frozen blueberries, unthawed
  • fresh lemon juice of 2 lemons
  • ½ cup sugar
  • ¾ cup milk
  1. If you have a high-powered blender, combine all ingredients at once and give it a whirl until all is thoroughly mixed and smooth.
  2. If you are working with a standard blender, combine frozen blueberries, lemon juice, and sugar; blend on highest level for a minute.
  3. Remove top and see if you might need to break up the ice a bit. I do this with a fork.
  4. Pour in the milk and continue to blend on high until mixture is completely blended, thick and smooth.
Option 1: Serve right away as soft-serve ice cream

Option 2: Pour it into a container with a lid and freeze it for 2 hours, or up to a week.

    This ice cream looks amazing. I love the color!! I also love that you didn’t need an ice cream maker. I am scared of mine…I used it twice when I got it and it didn’t work quite right (user error) so I’m scared to get back to it.

    You know, during the Unfortunate Incident with my fruit and veg freezer that I posted about last week, which resulted in my Berry Crust Pizza with chicken, cranberry, and stuff, I did manage to salvage some still-frozen blueberries.
    So I’m good. Score!

    One regret I have right now is that I didn’t have enough blueberries yet this summer. I’m afraid blueberries are so expensive once I leave California… :/ I like eating 2 cups of blueberries for fun. Your ice cream sounds SUPER good right now… hopefully I can grab some blueberries when I come back and make this ice cream! Sounds wonderful!
