Lasagna Grilled Cheese Sandwiches

These are SO much better than I thought!

I promise.

Remember when Saturday nights were all about, “what am I gonna wear?! … where are we gonna go?! … what club is da best?!”? Remember that??? SO much fun!

My Saturday nights now don’t look anything like that. In fact, Saturday nights are all about putting on some comfortable clothes and sitting in front of the TV with a big bowl of Salted Chocolate Caramel Popcorn. I’m not complaining.

Thus, when my husband gave me a “heads-up” about spending our Saturday night at home entertaining guests and watching basketball (?) … AND telling me about it only 2 hours before said guests were due to arrive (!!!!) ?! I wanted to hurt him.

That’s what I thought…

These Grilled Cheese Sandwiches Are Great As Appetizers

Luckily, and fortunately for him, few days prior, I had picked up a box of Stouffer’s Meat Lovers Lasagna #NewFavorites from Walmart for those “just in case” moments.

In an effort to make things look as fabulous as possible in front of our lovely guests, I ran around like a chicken with its head cut off, trying to get everything done. I cleaned every corner, picked up every lego (OUCH!!!), and whipped up this Lasagna before stuffing it into some delicious New York Texas Toast with lotsa cheese.

That’s right. I ate bread covered and stuffed with lasagna… AND I loved it.

How To Serve Lasagna Grilled Cheese Sandwiches

Here’s the best part – I served it 3 ways!

  • Fat and messy Lasagna Grilled Toast Sandwiches for the boys;
  • Classy and elegant Lasagna Grilled Toast Sandwich Bites for the girls;
  • Lasagna Grilled Toast sticks for the kids!

Look. I didn’t have time to make 3 more dishes – girl gotta get ready and look good for her guests, you know what I mean?

In the one hour that it took for this Lasagna to bake, I had enough time to shower, pretty up and enjoy my Saturday night with my awesome little family, great food, and amazing friends. SCORE! Or should I say, slam dunk!

Lasagna Grilled Cheese Sandwiches

This recipe for Lasagna Grilled Cheese Sandwiches is made with Texas toast stuffed with cheese and meat lovers lasagna for the best grilled cheese recipe ever!

Prep Time 10 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 20 minutes

Ingredients
  

  • 1 box (38-ounces) Stouffer's Meat Lovers Lasagna
  • 1 to 2 packages (8 slices per package) New York Texas Toast
  • 2 cups part-skim shredded Mozzarella Cheese
  • butter

Instructions
 

  • Cook Lasagna according to the directions on the package.
  • Let cool 20 minutes.
  • In the meantime, bake the Toast according to the directions on the package.
  • Let cool 5 minutes.
Assemble the sandwiches.
  • Evenly divide up the cheese and lasagna.
  • Sprinkle mozzarella cheese on a slice of toast and top with lasagna; sprinkle with cheese again and top with another slice of toast.
  • Continue to assemble the rest of the sandwiches.
  • Put pan on stove over medium heat until hot.
  • Butter the outside of each slice of toast and slide into the pan.
  • Lower the heat and press down with either a cover or a spatula to help the cheese melt.
  • When bread is browned, flip and press down again; continue to cook for a few more seconds.
  • Remove from heat.
  • Serve warm.
To assemble into "bites" and "sticks":
  • Let sandwiches cool down a bit.
  • Cut the crusts off a little wider (these will be your "lasagna sticks"), working the sandwich into a square shape.
  • Secure with cocktail forks or toothpicks.

    One of my friends used to swear by leftover spaghetti sandwiches, but I’ve always been a little leery of the idea. Those delicious and gooey and cheesy sandwiches of yours, on the other hand? Totally winning me over. Love it.

    Your idea looks VERY delicious! I would have never thought to stuff a sandwich with lasagna but I am going to try it…and serving it three ways? Genius!

    P.S.- I would have said,”So what are you fixing??” Haha! I’ll be nice next time and make sure I have one of these lasagnas in the freezer. 🙂

      I felt like I had to do a tiny bit more (I thought about the pizza part…a lot :-)) because the guests we had were my daughters’ Godparents. 😀
