Hi, you guys!!

Umm. Can we just call it dinner time? I’m kinda hungry. Let’s just take a minute and have somethin’ to eat, ‘mkay?

So there’s this thing about me. If you haven’t noticed, I like quick, nutritious, but delicious, veggies-and-chicken-involved type meals. However, today I’d like to introduce you to the busy Mom’s method of cooking said meal.

Remember that one time when we had Lemon-Pepper Salmon In Foil?

Well.

When I was in college, every Sunday night, I would place a few chicken breasts in a baking dish, pour Kraft Italian Dressing over the chicken, cover it, and bake. Those chicks were my dinner all week long. And with time, I got more creative by adding vegetables to the mix.

Later on, creativity juices got even better, and that is when I started cooking/grilling/baking my chicken breasts in foil.

Nowadays, between school, sports, dance, play and homework – I got tired just typing it all out – this Mom’s best friend in the kitchen is still her aluminum foil and a good dose of Zesty Italian Dressing.

I’ll tell you what. Tonight or tomorrow night, I’d like for you to pick up a pound of chicken breasts, few colored peppers, some basil, onions, garlic and Kraft Zesty Italian. Aaaaand some aluminum foil, of course.

Then, when you get home, cut up some foil, place a slice of chicken on each, add colorful veggies, and top it all with a tablespoon or two of the salad dressing. Wrap ’em up, put ’em in the oven, and wait.

Italian Chicken and Vegetables is prepared with juicy chicken breasts baked in aluminum foil with peppers, onion, garlic, fresh herbs, and Italian Dressing.

Ingredients
  

  • 4 aluminum foil sheets, large enough to wrap around one chicken breast
  • 4 boneless skinless chicken breast halves, (4 ounces each)
  • 4 teaspoons olive oil
  • salt and fresh ground black pepper, to taste
  • 2 cloves garlic, chopped
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, cut into thin slices
  • 4 baby carrots, cut into thin slices
  • 4 basil leaves
  • cup Zesty Italian Dressing

Instructions
 

  • Preheat oven to 375˚F.
  • Place one chicken breast on each sheet of foil.
  • Drizzle a teaspoon of olive oil over each chicken breast.
  • Season chicken with salt and pepper.
  • Arrange chopped garlic, slices of onion, peppers, and carrots on top and around each chicken breast.
  • Place a basil leaf on top of each chicken and vegetables.
  • Spoon a couple of tablespoons of salad dressing over chicken breast and vegetables.
  • Fold the sides of the foil over the chicken, covering completely; seal the packets closed.
  • Transfer foil packets to a baking sheet.
  • Bake for 35 to 40 minutes, or until chicken is cooked through.
  • Remove from oven and carefully open up the foils; put the packets under the broiler for 3 minutes.
  • Remove from broiler.
  • Serve .

  1. I use this method for cooking salmon fillets and it works perfectly every time. I am going to try this with chicken this week and i will let you know how it turns out. I expect that it will be wonderful.

  2. I just made the Zesty Italian chicken in foil. Nice and easy and has a really nice tangy taste.

    1. Not sure if my comments will get posted as often negative comments are left out. I made this chicken and seriously it lacked flavour. It was very bland. No one liked it unfortunately.

  3. Made this for lunch today and it was AMAZING! The chicken was extremely tender, veggies very succulent and tasty!
    Next time I will add some potatoes to the mix!
    EXCELLENT fast and easy meal! I will make it again!

  4. If in ww freestyle how many points, chicken is free An using light dressing, so would dressing an oil all I would count?

      Hi!! I honestly have no idea! Believe it or not, I have never used a toaster oven… :-/. IF you do try it, please let me know if it worked. I think it should, I don’t see why not.

    2. This was amazing! Took me about twice the prep time since I’m not very experienced when it comes to cooking but I would absolutely make again. I’m wondering if it would turn out as good with larger chicken breasts and longer cook time because I would definitely like bigger portion sizes next time without extra foil packets.

  5. I just made this. The chicken was so tender and moist and the veggies were perfectly seasoned. This is going into my regular rotation!

  6. The cook time wasn’t quite right.
    I ended up cooking mine for 45 minutes.

    The chicken was very moist
    And the veggies were rich with flavor.
    Would pair nicely with a baked potato or on a bed of jasmine rice.

    1. How come this chicken was 45 minutes the same exact dish with BBQ sauce is only meant to cook 25 minutes I’m confused?

      1. I live at a higher altitude here (5500 feet above sea level) and because water boils at a lower temperature as the pressure decreases, I have to adjust the cooking time for anything being steamed. Foil packet cooking involves steaming the ingredients, so the actual cooking temperature is always 212 degrees. However, here where I live I have to increase the cooking time by about 8 to 10% because the water boils here at about 201.5 degrees, so I have to increase the cooking time accordingly. If you live at sea level, then this explanation does not apply to you.
