Back in the day when I was this tall, my parents and I would take off into the beautiful forests in Macedonia and hunt for mushrooms all day long. There was no escape, I was on my way to becoming a mushroom-ivore, like the rest of the fam.

At one point in my life my main meal consisted of a bowl of mushrooms with some honey-mustard dressing. :/

I grew out of that. I learned how to cook.

Now I serve them as a side dish, an appetizer, or a topping of some sorts.

But while I know how to hunt for these babies, I really had no clue that one, I could grow them in my kitchen, and two, I can grow them in my kitchen?!

I’ve never grown mushrooms before! But I have been hearing about mushroom kits for some time now, and when the box arrived, I could not wait to tear it open and see what happens!

Once you receive the box and grow the ‘shrooms, consider making this delicious appetizer of Mushroom Bruschetta.

You will need:

  • 1 medium-sized French baguette or Italian bread
  • olive oil to brush on top of bread
  • 1 garlic clove, peeled
  • 2 tablespoons olive oil
  • 8-ounces of mushrooms, wiped clean
  • 2 cloves garlic, minced
  • Sea Salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley

Directions:

  • Preheat oven to 450.
  • Coat one side of each slice with olive oil using a pastry brush.

  • Place the bread slices on a foil-lined baking sheet, olive oil side down.
  • Toast for 5-6 minutes, or until the bread just begins to turn golden brown.
  • In the meantime prepare the mushrooms.
  • In a large skillet heat 2 tablespoons olive oil over moderate heat until hot; add in the mushrooms and cook until softened.
  • Stir in the garlic, salt, and pepper, and cook for another 5 minutes, stirring occasionally.

  • Remove skillet from heat.
  • Remove the bread slices from the oven and let cool for a minute.
  • Turn over the the toasted bread, olive oil side up, and rub lightly with garlic clove while still warm.
  • Top toasted bread with sauteed mushrooms and garnish with fresh parsley.

    I’m going to keep an eye out for those kits. I have bought large amounts of mushrooms at the farmers market a few times and they seem to go bad before I can use them all. The kit id a great idea. I love the bruschetta too, great work.

    I love mushrooms when they are sauteed in garlic and butter with a little white wine…yum! I always have to make 2 batches since I basically eat the first batch before I can serve it with anything. :)

    Squeal! This is like the coolest little thing ever. I put mushrooms on everything. They’re my favorite veg (although eggplant is swiftly going up the ranks) and the thought of being able to make my own is pretty much too awesome for me.     Mushrooms in a box?! I love it. My kids would go crazy for this…wonder if it would get them to eat a mushroom. I doubt it, but you never know. Besides, I’m sure I could eat them all myself (and even share a few with hubby). ;)

    Those mushrooms and the bruschetta look divine! Today was a strange day- I went to the farmers’ market pretty early and found some great stuff! But I was so tired because of not sleeping well last night that I slept the rest of the morning. The rest of the day I’ve been doing household chores and errands, but I did make a wonderful tomato sauce with pasta for dinner :)

    I just read about the mushroom boxes and their use of coffee grinds to grow mushrooms on the WF blog this morning! Great concept. I have never met a mushroom that I didn’t enjoy-great, simple recipe-the best kind!

    I love that idea! So smart! And I have a mushroom obsession as well. There is a stand at the farmers market I go to that just sells mushrooms, so many types of mushrooms! I just seasoned salt them and pan fry them like you did, and devour!
