Speaking of things that make me feel complete… let’s talk Crepes! I love ’em! My love for crepes is so deep, they have become one of my go-to comfort foods.

I called my mom the other day to ask her a question or two. I wanted to get the inside scoop on her crepes-recipe because she’s sort of a pro. Hands down, she makes a mean crepe! As we were talking and discussing her recipe, she says, “…and don’t forget the “pehm”…”. Now, before I continue, you need to know that my Mom has a really, really deep Macedonian accent. She rolls her R’s, and her “the” sounds like “duh”. She says things like, “honestly Gah” instead of “honest to God”, and “Arthur Itis” instead of arthritis.

So, naturally, I asked her to repeat herself and, again, she said, “don’t forget the PEHM!”. What is pehm, Mom? She shouts back, “the tall, yellow tube…PEHM!” Do you mean PAM?!? “Yes, Katerina! Pehm!!!” lol 😂

Now that we got that all sorted out, I do agree with her that if you want that perfect crepe, the one that won’t stick to anything BUT your lips, PAM is your girl. If you want your crepes to turn out right the first time, especially during the holiday season, PAM Cooking Spray is where it’s at. According to my mom, “Pehm” is all you need.

How to Make Crepes

  1. Whisk together flour and salt.
  2. Combine milk, eggs and oil.
  3. Gradually add milk mixture to flour mixture, whisking until smooth.
  4. Let stand 20 minutes.
  5. Lightly grease a large nonstick frying pan, or a crepe pan, with PAM cooking spray and set over medium heat.
  6. Add 1/3-cup batter and swirl to completely cover bottom of pan.
  7. Cook until edges of crepe curl-up and underside of crepe is golden brown; about 2 to 3 minutes.
  8. Flip the crepe and continue to cook for 30 to 45 seconds, or until lightly browned.
  9. Remove crepe from pan and repeat with remaining batter.
  10. Coat pan with cooking spray in between each crepe.
  11. Keep crepes covered

A couple of years ago I was going to serve baked cinnamon doughnuts for our Christmas breakfast, but the unthinkable happened. My doughnuts stuck to my NON-STICK doughnut pan. I was furious. I mean, you can imagine, right? It’s Christmas morning and my promised doughnuts turned into crumbs! For my second attempt I used PAM cooking spray and the doughnuts popped right out. Such a relief.

Ingredients
  

For the Crepes
  • 3-1/2 cups all-purpose flour
  • pinch of salt
  • 4 cups 2% milk
  • 4 eggs
  • 1/4 cup canola oil
  • PAM Cooking Spray
For the Coffee Mascarpone Cream
  • 4 teaspoons instant espresso powder
  • 1 tablespoon water
  • 1 cup chilled heavy whipping cream
  • 1/2 cup mascarpone cheese , room temperature
  • 1/2 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions
 

  • In a medium bowl, whisk together flour and salt; set aside.

Prepare the Coffee Mascarpone Cream
  • In a large mixing bowl, stir espresso into 1 tablespoon water until coffee dissolves.
  • Add cream, mascarpone, sugar, and vanilla.
  • Beat until filling is thick and smooth.
  • Spread the Coffee Mascarpone Cream inside each crepe.
  • Roll or fold the crepe and serve.

    I have never made crepes,but with this recipe and using Pam cooking spray, I just might be able to do it! I will also use Pam when making Mom’s Belgian waffles.

    I will use it to make egg pancakes- they are like crepes but you put butter, sugar, and bacon and eat them for breakfast.

    I use Pam every morning when I give a quick shot of it to my pan to cook my easy over eggs. Pam ensures the easy over part. In my holiday baking I use Pam for a quick spray to cookie sheets for my numerous batches of cookies. Also great for spraying measuring spoons and cups when measuring honey or molasses.

  10. Really both your crepes and your coffee mascarpone cream have me swooning. How perfect is this? I adore using mascarpone for creams and fillings and frostings and coffee is a favorite flavor. The crepes are perfect! And I adore the story of your mom 🙂
    I grew up in a family that used PAM all the time but it just does not exist in France. But I ADORE all of my Le Creuset ware – the pots, pans, skillet and the casserole dishes. I dream of owning their pie plate!

    I use Pam spray all of the time. To grease baking dishes before cake and brownies and to coat all of my saute pans before using.

  19. I have been using Pam for as long as I can remember. I use it for EVERYTHING! Baking, sauteing, cooking, etc. EVERYTHING!

    I literally use Pam for everything! Baking cookies, cakes, in my crock pot, for scrambled eggs, everything!

  23. I love to bake but I hate to “butter” and “flour” the pans, so I just use pam to spray them and nothing sticks!

  24. What don’t I use Pam for is the better question! Aside from spraying pans, I spray measuring cups/spoons before measuring sticky ingredients.

  25. I also wanted to tell you in a separate comment that I love Pam and use it all the time. My mother also taught me how to make crepes and while I love eating them, making them isn’t nearly as much fun which is why I don’t make them as often as I’d like.

  26. Of course, Pam is the best for baking or Cooking but it is also great on squeaky door hinges. Carefully spray Pam on the hinge, have a paper towel ready to wipe up any over spray. Move door back and forth…..no squeak!!

    I go through so much Pam for baking in my house!! My husband made waffles yesterday and they stuck to the waffle iron. He forgot the “Pehm!” 🙂

    I will use PAHM (PAM) to coat my baking dishes so that my potato’s don’t stick, my cakes come out with no problem. Wondering if it would work to prevent all that glorious food sticking to my thighs? Love your recipes 🙂

  31. I just had crepes recently with ricotta and grated chocolate so I can imagine how tasty yours were. I still haven’t managed to pick up some espresso powder yet, which I was planning on already in order to make espresso panna cotta. I use Pam on a regular basis for baking. Shame I’m in Canada. 🙁

  34. I love Pam. I’m generally a “store brand” shopper when it comes to most things, but the generic cooking spray just isn’t the same–doesn’t work nearly as well as Pam!

    Ooooo these crepes look amazing! with that marscapone cheese, it makes anything taste good!!! I use pam just about every single day! I buy it in bulk so definitely will be using it to make pies!
