French Fridays with Dorie: Pumpkin Stuffed with Everything Good

I am a huge fan of stuffed foods; peppers, eggplants, zucchini, and now pumpkin. I had never stuffed a pumpkin before, and now I am glad I did.

The stuffing for this pumpkin was absolutely delicious; stale bread, bacon, garlic, mozzarella and gruyere cheese, cream … mmm mmm mmm!

I just wish I had stuffed a bigger pumpkin – we could’ve used some more of this deliciousness, no doubt about that.

Banana Bread with Cinnamon-Spiced Pecans

Truth: I hide bananas.

Not because I’m bananas about bananas, but because I’m bananas about banana bread. And nuts about nuts… errr… pecans.

I recently received a very generous package from Amelia’s Spicing Pecans and I could not keep my hands out of these jars.

One jar is missing; the herb-spiced pecans didn’t survive the attack of my fingers. I love mindless snacking.

Anywho. Those bananas I was hiding… I mashed ‘em up, added in some sugar and eggs and threw in some of the cinnamon-spiced pecans. Oh. My. Yumminess. Insane!

We have never polished off an entire loaf of banana bread within one day. This one didn’t make it to the next hour. Those pecans added so much flavor and texture – we loved it.

Banana Bread with Cinnamon-Spiced Pecans

(adapted from Simply Recipes)

You will need:

  • 3 to 4 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of flour
  • 1/2 cup cinnamon-spiced pecans

Directions:

  • Preheat oven to 350.
  • With a wooden spoon, mix the melted butter into the mashed bananas in a large mixing bowl.
  • Mix in the sugar, egg, and vanilla.
  • Sprinkle the baking soda and salt over the mixture and mix well.
  • Add in the flour and carefully mix the batter.

  • Fold in the pecans.
  • Pour the mixture into a buttered 4×8 inch loaf pan.
  • Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool on a rack, then remove it from the pan to serve it.

French Fridays with Dorie: Pissaladiere

Fridays, Sundays… what’s the difference? ;)

In fact, I didn’t post this on Friday because we were throwing  a virtual bridal shower for one of our fellow bloggers…that was fun!

But onto this pizza - this might be one of the best pizzas ever. Okay, maybe not ever, but it was really good. Specifically the crust…I  loved the crust!

The caramelized onion topping is delicious, too, but I could eat that pizza crust without anything on it. Especially without the anchovies. No, thank you. I used bacon instead. Love me some bacon!

But I’m still tearing up from all those onions. 6 of ‘em to be exact. Thinly sliced. I thought my eyes were going to fall out.
